BRUNCH TIME IS CRUNCH TIME

This is your chance to think beyond “breakfast” foods and really make your mark on this get-together. Go big and give your guests what they want – and what they want are these phenomenal buttermilk fried chicken sliders. They’re crispy and crunchy, and the buttermilk helps keep the chicken tender while adding a nice little kick. For a great match, look no further than Don Miguel Gascón Colosal Red Blend. This big red, in all its full-bodied glory, pairs well with the richness of fried foods.

 

Check out the below recipe for these amazing (and easy) fried chicken sliders. Remember, you can customize it to your tastes. Have fun with different toppings or try playing with the spices in the flour mixture to create your perfect flavor profile. (By the way, deep-frying can be a messy pursuit. Instead, we pan fry the chicken until perfectly crisp and golden brown.)

  • 3 large boneless, skinless chicken breasts, cut into pieces (12 pieces total)
  • 2 cups buttermilk
  • 1 cup flour
  • 2 teaspoons salt
  • 3/4 teaspoon chili powder
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon cayenne
  • Vegetable oil for frying
  • 12 mini slider buns
  • Mayonnaise, pickles and your favorite slaw for serving

Place the chicken in a large bowl and cover with the buttermilk. Cover and refrigerate overnight. The next day, mix the flour, salt, chili powder, paprika, garlic powder and cayenne in a large bowl. Preheat oven to 350 degrees. Begin breading the chicken by removing some pieces from the buttermilk and letting the excess drain off. Dredge in the seasoned flour mixture to coat completely. Continue until all the chicken is breaded. Heat a 1/4-inch layer of oil in a large frying pan over medium-high heat. Working in batches, fry the chicken until golden brown, about four to five minutes. Flip, and fry for another four to five minutes or until cooked through. Set aside to drain on a rack set over a baking sheet. Toast the slider buns in the oven, then spread some mayonnaise on each. Top with a piece of chicken, some pickles, slaw, and serve.
